Like my dad’s fried rice, except with riced cauliflower (It’s great! So is regular rice. This recipe works with the real stuff too!) and added turmeric for glowed-up skin. Dad didn’t care if his food made his skin look good, but not everyone’s effortlessly beautiful like you, old man. // Makes roughly 4 c.

- 1 head cauliflower, washed and patted dry, cut into florets
- 1 small onion
- 1 stick celery
- 2 carrots
- 2-3 cloves garlic
- few dashes turmeric
- few cracks of black pepper
- 1 T soy sauce
- salt (to taste)

1. Finely dice onion, celery, and carrots. Mince garlic well. The vegetables in this recipe can be swapped out or supplemented with others, but I love using onions/carrots/garlic as a base.
2. In a food processor, blend cauliflower florets until roughly grated to make “rice.” Pat out some excess moisture with a paper towel.
3. In a pan over medium heat, saute finely-diced veg of choice in a smidge of oil until fragrant.
4. Stir in riced and (somewhat dry) cauliflower.
5. Add a few dashes of turmeric and a few cracks of black pepper. Pairing turmeric with a pinch of black pepper makes the curcumin in the turmeric (anti-inflammatory property) more bioavailable!
6. Add ~1 T soy sauce, stir, and salt to taste. Enjoy!
